Chipotle Steak Bowl
Let the steak rest before it goes anywhere near the bowl. Cut it straight off the heat and the juice ends up in the rice instead of the meat.

Ingredients
16 oz
beef sirloin1 cup
white rice, cooked1 cup
black bean, drained and rinsed½ cup
greek yogurt1 tbsp
chipotle in adobo, minced1 tbsp
lime juice1 tsp
ground cumin1 tsp
smoked paprika1 cup
cherry tomato, halved½ cup
cilantro, chopped½
red onion, diced1 pinch
sea salt
Equipment
Cast iron grill pan · Sharp knife
Method
Season the steak hard with the cumin, paprika and salt and leave it out while the pan heats.
Get the grill pan smoking hot. Sear the steak 3 minutes a side for medium — no oil needed on a pan that hot, and you get the bar marks.
Rest it on a board for 5 minutes. This is not optional.
Stir the yogurt, chipotle and lime into a sauce while it rests.
Slice the steak against the grain into thin strips.
Build the bowls with rice and beans, pile the steak on, then the tomato, onion and cilantro, and spoon the chipotle sauce over.
