Crispy Chicken Nuggets
Crushed cornflakes instead of breadcrumbs. They stay crisp in the air fryer in a way panko never quite does, and you get the same shatter you want from a drive-through nugget.

Ingredients
20 oz
chicken breast, cut into 1½ inch pieces3 cups
cornflakes4
egg white¼ cup
all-purpose flour2 tsp
garlic powder2 tsp
smoked paprika1 tsp
onion powder1 tsp
sea salt½ tsp
black pepper1 pinch
cooking spray
Equipment
Air fryer · Rolling pin · Three shallow bowls
Method
Crush the cornflakes in a bag with a rolling pin until they look like coarse gravel. Not dust — you want the pieces.
Set up three bowls: flour with half the spices, egg whites, then cornflakes with the rest of the spices.
Dip each piece in flour, then egg white, then press it into the cornflakes so they actually stick.
Lay them in the air fryer basket with space between each one and spray the tops.
Air fry at 400°F for 12 minutes, turning once at 7 minutes.
They should sound hollow when you tap one. Eat them straight away — that crunch does not survive sitting.
