Egg White Breakfast Burrito
Egg whites go rubbery the second they overcook, so they come off the heat while still visibly wet. The residual heat in the pan finishes them on the way to the tortilla.

Ingredients
12
egg whites, about 12 large eggs' worth⅔ cup
black beans, drained and rinsed1½ oz
extra sharp cheddar, grated½
red onion, finely diced1
red bell pepper, diced1 tsp
olive oil1 tsp
ground cumin2
flour tortilla, large1 tbsp
hot sauce1 pinch
salt and black pepper
Method
Soften the onion and pepper in the oil over medium heat, 4 minutes, until the onion turns translucent.
Add the beans and cumin and warm through for a minute.
Pour in the egg whites. Push them around slowly with a spatula in large folds rather than scrambling hard.
Kill the heat while they still look underdone and glossy. They will keep setting in the pan.
Scatter the cheddar over so it melts in the residual heat, then season.
Warm the tortillas for 20 seconds, fill, fold the ends in first, then roll tight.
Sear the seam side down in the dry pan for 30 seconds so it holds shut.
