Cosmic Brownies

The trick is pulling them out while the middle still looks underdone. They set as they cool, and that is the difference between fudgy and cakey.

Ingredients

  • 1 cupgreek yogurt
  • ⅔ cupwhey protein powder, chocolate, about 1 scoop per 1/3 cup
  • ½ cupcocoa powder
  • ¾ cuprolled oat, blended to flour
  • 2egg
  • ½ cupgranulated sweetener
  • 1 tspbaking powder
  • 1 tspvanilla extract
  • 2 ozdark chocolate, melted, to top
  • 1 pinchsea salt

Equipment

8x8 inch baking pan · Mixing bowl · Baking parchment

Method

  1. Heat the oven to 350°F and line an 8x8 inch pan with parchment.

  2. Blend the oats on their own until they look like flour.

  3. Mix everything except the dark chocolate into a thick batter. It should drop off the spoon slowly, not pour.

  4. Spread it into the pan and level the top.

  5. Bake 20 minutes. Pull them while the centre still looks slightly wet — they finish setting out of the oven.

  6. Cool completely in the pan, then spread the melted chocolate over and chill 20 minutes before cutting.
